Turkey Taco Soup
The secret ingredient in this soup makes it so nutritious, and no one will even notice it!
Serves 4.
Ingredients:
- 1 can tomato sauce
- 1 can Rotel
- 1 can low sodium black beans, rinsed
- 1 bag frozen corn
- 1 lb browned ground turkey
- 1 onion, diced
- taco seasoning
- 1 can pureed pumpkin (not pumpkin pie puree)
- 1 32-oz container of low sodium chicken broth or veggie broth
- sliced avocado
- optional: cheese for garnish
- chopped cilantro
Taco Seasoning blend:
- 1 Tbsp. Chili Powder
- 1/4 tsp. Garlic Powder
- 1/4 tsp. Onion Powder
- 1/4 tsp. cayenne pepper
- 1/4 tsp. Dried Oregano
- 1/2 tsp. Paprika
- 1 1/2 tsp. Ground Cumin
- 1 tsp. Salt
Directions:
Brown ground turkey in a pot. Add Taco Seasoning blend, and mix well. Add onions and cook for 1-2 minutes. Add all ingredients and bring to a boil. Reduce to simmer for 20 minutes.
Serve with avocado slices, a tsp of shredded cheese, and cilantro.
