Turkey Taco Soup

The secret ingredient in this soup makes it so nutritious, and no one will even notice it!

Serves 4.

Ingredients:

  • 1 can tomato sauce
  • 1 can Rotel
  • 1 can low sodium black beans, rinsed
  • 1 bag frozen corn
  • 1 lb browned ground turkey
  • 1 onion, diced
  • taco seasoning
  • 1 can pureed pumpkin (not pumpkin pie puree)
  • 1 32-oz container of low sodium chicken broth or veggie broth
  • sliced avocado
  • optional: cheese for garnish
  • chopped cilantro

Taco Seasoning blend:

  • 1 Tbsp. Chili Powder
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. Dried Oregano
  • 1/2 tsp. Paprika
  • 1 1/2 tsp. Ground Cumin
  • 1 tsp. Salt

Directions:

Brown ground turkey in a pot. Add Taco Seasoning blend, and mix well. Add onions and cook for 1-2 minutes. Add all ingredients and bring to a boil.  Reduce to simmer for 20 minutes.

Serve with avocado slices, a tsp of shredded cheese, and cilantro.
